How is this possible? Ian Pierce I love you so so so much. You were one of the best friends I could ever ask for. You had the ability to turn my day from bad to good with just a few words. It’s so unfair that you had to go so soon. I know you’ll be watching over us all. I’m a better person today for who you are and what you meant to me. I miss you so much.
We used this recipe in place of mashed potatoes, but you could have it as a dip for veggies, or thin it out with more broth/water and make into a soup!
1 head of cauliflower, core removed
1 small bag frozen peas, approx 2 cups
4 tbsp olive oil
4 cloves garlic, chopped
16 large basil leaves, picked
2 sprigs fresh thyme, picked (optional)
1 cup pine nuts
1-2 cups vegetable broth to blend
salt and pepper to taste
Steam cauliflower and peas until tender, but not mushy. Place half the vegetables, herbs, olive oil and pine nuts in the blender, adding 1/4 cup vegetable broth, plus extra as desired. Puree on high until creamy, adding salt and pepper to taste. Repeat for second batch.
